Sensory profile Visual examination: Bright straw-yellow color with subtle and elegant coppery tinges. Very fine, dense and long-lasting perlage. Olfactory examination: Clean, intense and essential. Opens with pronounced notes of red berries (currant, wild strawberry), bitter citrus, bread crust, yeast and a marked mineral and chalky undertone. Gustative examination: On the palate it is taut, vertical, with great structure and rigor. The absence of dosage (Dosage Zero) enhances pronounced acidity and a distinct sapidity, balanced by the natural creaminess and enveloping quality of Pinot Noir. Food pairings Seafood crudo, oysters, shrimp and tuna or salmon tartare Mixed fry of small fish or tempura Traditional Lombard and Emilian cured meats (e.g., Culatello, Prosciutto di Parma) Seafood risottos or risottos with blue cheeses Aged hard cheeses (e.g., Parmigiano Reggiano, Grana Padano) Service Glass used: Franciacorta tulip glass with a wide bowl. This specific terroir was chosen by the Muratori Brothers to ensure the ideal balance between acidity and varietal complexity.
