An exceptional white Burgundy signed by Jérémy Carteret Les Pétales blancs 2024 embodies the pure expression of Chardonnay in Burgundy, more precisely in the Rully appellation, renowned for its mineral and refined white wines. This wine is made by Jérémy Carteret, a talented winemaker who works his plots with sustainable farming, with a deep respect for the soil and natural cycles. Terroir and grape: the elegance of Rully’s limestone The grapes come from the parcel “Les Cailloux,” located in the southwest sector of Rully. This limestone terroir, rich in white stones with good drainage, gives the wine a distinctive mineral character and remarkable freshness. The vines, planted in the 1970s, yield controlled returns (around 30 hl/ha), ensuring optimal aromatic concentration. Chardonnay, the king of white Burgundy, expresses itself here with precision and finesse. Winemaking and ageing: a hands-on, quality-driven approach The vinification of Les Pétales blancs relies on traditional methods: foot trodden pressing, vertical pressing, fermentation with indigenous yeasts, and 9 to 10 months of lees aging. The élevage is mainly in Stockinger oak barrels, about 75% new, bringing a touch of roundness and aromatic complexity without masking the fruit’s purity. The result is a structured, deep wine that retains lively freshness. Style and tasting: freshness, white flowers and mineral notes On the palate, Les Pétales blancs 2024 reveals a delicate nose with aromas of white flowers (hawthorn, acacia), lemon, green apple, and flint. In the mouth, the wine is taut and mineral, with integrated acidity supporting a long, saline finish. It is an elegant, gastronomic white that will appeal to lovers of distinctive white Burgundy. Food pairings: fish, crustaceans, cheeses and poultry This Rully white pairs perfectly with white fish in sauce, scallops, langoustines, or even a sea bream tartare. It also goes very well with fresh or aged goat cheeses, roasted poultry, and dishes with light cream. Serve chilled (10–12 °C); it will also be perfect as an aperitif with iodized canapés. Cellaring potential and service tips Although already appealing in its youth, Les Pétales blancs 2024 has good aging potential of 3 to 5 years, or more for lovers of evolved wines. Store it in a cool, dark cellar, away from temperature fluctuations. To fully enjoy its expression, open the bottle 30 minutes before serving and use a wide white wine glass to release its aromas.
