Côte-Rôtie ‘Les 3 Brunes 2023 Appellation: Côte-Rôtie Colour: red Grape variety: (+ or -) 94% Syrah and (+ or -) 6% Viognier Soil: Micaschists. The vines are grown on steep, south-facing slopes (lieu-dit Fourvier) and east and south-east facing hilltops (lieux-dits Le Plomb and L'Arselie). Vinification / Maturing / Blending: Harvested in 50 kg crates, the different parcels are vinified and matured separately to reflect the specific characteristics of each terroir. Aged in demi-muids for 18 to 20 months, then blended en masse one month before bottling by gravity without filtration. Tasting notes: dark ruby colour. Complex aromatic palette combining red and black fruit aromas (raspberry, blackcurrant, etc.) with floral hints (violet in particular), evolving to spicy notes. Gastronomic accompaniments: beef carpaccio, home-made steack tartare, leg or shoulder of lamb 7 hours old... Saint-Joseph white “Les Ribaudes" 2024 - Appellation: AOC St-Joseph Colour: white - Grape varieties: 60% Marsanne / 40% Roussanne - Soil / Composition: Altered granites (Velay granites) on moderately deep soils. Blend of 7 parcels in the commune of Chavanay, at the northern end of the appellation. - Vinification / Ageing / Blending: Grape varieties and plots are harvested separately. Pressing as close as possible to the harvest to preserve the integrity of the aromas. Fermentation in stainless steel tanks (indigenous yeasts), then racking of part of the wine into barrels of 1 to 7 wines. Malolactic fermentation (indigenous bacteria). Mass blending approximately one month before bottling. - Tasting notes: Aromas of acacia and honeysuckle, supported by hints of almond and hazelnut, are brought out by Marsanne, which also adds structure and uprightness to the wine. Delicate notes of hawthorn, green tea and floral honey come from the Roussanne, which brings amplitude and depth to the palate. - Maturity / Pairings: Can be enjoyed young as an aperitif or with a spring starter, or with a few years' ageing on a more elaborate dish. Saint-Joseph red “La Gloriette" 2023 - Appellation: AOC St-Joseph Color: red - Grape variety: 100% Syrah (Serine massal selection) - Soil: Velay granite. Selection of the estate's oldest vines (50 to 80 years old), facing north-east and north-west, in the locality known as “Le Blanchard”. - Vinification / Maturing / Blending: Harvested in 50 kg crates, the grapes are vatted with a proportion of 45 to 75% whole grapes. Vatting lasts about 3 weeks, with alternating pumping over and gentle manual punching of the cap. The wines are then racked into demi-muids (600 liters) for 15 to 18 months. Blending is carried out en masse one month before bottling, which is gravity-fed and unfiltered. - Tasting notes: Dark garnet color with carmine highlights. The nose opens with small black fruits, enhanced by noble notes of graphite and toasted bread crust. Full-bodied and complex on the palate, with aromas of black fruits, spices and braised/peppery notes, supported by a strong, velvety tannic structure. - Gastronomic pairings: autumnal small game in sauce (pigeon, wild duck, etc.), roast game (venison jig, baked wild boar shoulder, etc.).
