2021 Bollinger, PN AYC21 - Champagne Brut - 1 Bottle (0.75L)

Appearance A beautiful golden-yellow hue. Nose The aromatic bouquet opens with scents of ripe yellow fruits, reminiscent of Mirabelle plum and quince. It then develops rich, indulgent notes of toasted bread, almond, and hazelnut, underscored by hints of pastry and brioche. Delicate nuances of acacia honey and white flowers round out the profile. Palate The attack reveals a creamy texture perfectly balanced by lovely vibrancy. The palate offers a harmonious blend of ripe fruit flavors, pastry notes, and a subtle touch of citrus. The tasting experience concludes with a lingering finish marked by blood orange. Food Pairing This wine pairs ideally with premium seafood, such as pan-seared scallops with citrus, or roasted white fish in a creamy sauce. It also elevates white meats in sauce—such as almond-crusted poultry—and makes a perfect companion for fruit-based desserts like a thin apricot and honey tart. Serving and Cellaring It is recommended to serve the PN AYC 21 Blanc de Noirs Brut well-chilled, at a temperature between 10 and 11°C, taking care to open the bottle gently. This cuvée can be enjoyed now or cellared to allow for further aging.
