MATURED WINE: General notes on aged wines, old wines and wine rarities: Wine is a natural product that, over decades of storage, can undergo changes in taste and color. Therefore we cannot guarantee the drinkability and flawless taste of old wines. However, we handle the purchase of these wines with the greatest care, verify optimal storage conditions, check the bottle history as far as possible, and also perform visual inspections of the wine contents for cloudiness and changes in consistency. As mentioned, older, mature wines change their original taste during decades of storage and can develop a mature character. White wines often take on a darker color (similar to Cognac, Sherry or amber) and can form sediment; in red wines a deposit often forms at the bottom of the bottle. A different appearance and taste experience compared with young wines is not unusual for mature wines. For wine drinkers who have problems with the sometimes fresh, pronounced acidity of young wines, mature wines can be a real indulgence, as the wine acidity loses strength and aggressiveness over the years.
